- 4 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 can cream of chicken soup
- 1/2 cup milk
- 1/2 cup chopped onions
- 2 tablespoons butter
- Salt and pepper to taste
- 1 cup crushed cornflakes (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C). Prepare the diced potatoes.
- In a large mixing bowl, combine the diced potatoes, cheddar cheese, sour cream, cream of chicken soup, milk, and chopped onions, mixing them well.
- Pour the mixture into a greased baking dish, dot with butter, and season with salt and pepper. Add crushed cornflakes on top if desired.
- Bake for 45-55 minutes until bubbling and golden brown. Allow to cool slightly before serving.
Notes
Can be served warm as a side or main dish. For a lighter option, serve with a garden salad.
