Description

A comforting breakfast casserole featuring tender potatoes, fluffy eggs, and a blend of tasty vegetables and cheese.


Ingredients

  • 4 cups diced potatoes
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup diced vegetables (bell peppers, onions, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the diced potatoes, eggs, shredded cheese, milk, salt, black pepper, garlic powder, onion powder, and diced vegetables in a large mixing bowl.
  3. Pour the mixture into a greased 9×13 inch baking dish and spread it out evenly.
  4. Bake for 45-55 minutes, or until the eggs are set and the potatoes are tender.
  5. Cool for a few minutes before slicing and serving warm.
