Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup pink frosting
  • Sprinkles for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. Cream together the softened butter and sugar until light and fluffy (2-3 minutes).
  3. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, salt, and coconut flakes.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Let the bars cool completely, frost with pink frosting, and add sprinkles if desired.
  9. Cut into bars and serve.
