Ingredients

  • 1 ½ cups granulated sugar
  • 1 cup butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Pink food coloring

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Add the eggs one at a time, beating well after each addition.
  3. Mix in the buttermilk and vanilla extract. Sift together flour, baking powder, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Add pink food coloring to the batter until your desired shade is reached. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick comes out clean. Allow to cool for 10 minutes in the pans before turning out onto wire racks.

Notes

Store in an airtight container at room temperature for up to 2-3 days or refrigerate for up to a week. Freeze un-frosted layers wrapped tightly for up to 3 months.
