Ingredients

  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 can (20 ounces) pineapple slices, drained
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Melt the butter in a round cake pan and sprinkle brown sugar over it.
  2. Arrange pineapple slices on the brown sugar layer and place a cherry in the center of each slice.
  3. In a mixing bowl, combine flour, granulated sugar, milk, oil, eggs, vanilla extract, baking powder, and salt. Beat until smooth.
  4. Pour the batter over the arranged pineapple and cherries. Bake for 30-35 minutes until a toothpick inserted comes out clean.
  5. Let the cake cool for a few minutes before inverting it onto a serving plate.
