Ingredients

  • 1 cup brown sugar
  • 1 (20 oz) can pineapple slices
  • Maraschino cherries (optional)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your round cake pan by melting 1/4 cup of butter within it.
  2. Sprinkle 1 cup of brown sugar evenly over the melted butter and arrange the pineapple slices on top. Optionally, add Maraschino cherries in the centers.
  3. In a large bowl, mix together the flour, granulated sugar, milk, vegetable oil, eggs, baking powder, vanilla extract, and salt until smooth.
  4. Pour the cake batter over the pineapple and sugar layer, bake for 40-45 minutes until golden brown, and invert onto a serving plate.

Notes

For added flavor, consider using fresh pineapple instead of canned. Allow the cake to cool slightly before inverting to maintain shape.
