- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder

- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt the unsalted butter, then mix in granulated sugar and brown sugar until well combined.
- Add the eggs one at a time along with the vanilla extract, mixing until smooth.
- In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients and stir until just combined. Fold in chocolate chips and crushed peppermint candies.
- Drop balls of dough onto the prepared baking sheet, leaving space between each ball. Bake for 10-12 minutes, until edges are set and the center is slightly soft. Allow to cool before serving.

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months, layered between parchment paper.
