Description

Delightful fusion of flavors that combines the essence of traditional pecan pie in cookie form, perfect for cozy gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 3/4 cup corn syrup
  • 1/4 cup additional brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the egg and vanilla extract until creamy.
  4. In another bowl, mix flour, baking soda, and salt; then gradually add to the butter mixture.
  5. Fold in chopped pecans.
  6. In a clean bowl, mix corn syrup and additional brown sugar until syrupy.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Make a small indentation in each cookie and fill with the pecan mixture.
  9. Bake for 12-15 minutes or until lightly golden.
  10. Allow cookies to cool on a wire rack before serving.

Notes

For a twist, swap pecans for walnuts or almonds. They can also be made ahead of time and stored in the fridge before baking.
