- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/3 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup pecans, chopped
- 3/4 cup corn syrup
- 1/4 cup additional brown sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until creamy.
- In another bowl, mix flour, baking soda, and salt; then gradually add to the butter mixture.
- Fold in chopped pecans.
- In a clean bowl, mix corn syrup and additional brown sugar until syrupy.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Make a small indentation in each cookie and fill with the pecan mixture.
- Bake for 12-15 minutes or until lightly golden.
- Allow cookies to cool on a wire rack before serving.
Notes
For a twist, swap pecans for walnuts or almonds. They can also be made ahead of time and stored in the fridge before baking.
