Description

A delightful twist on the classic childhood favorite, this peanut butter and jelly chia pudding is nutritious and easy to make.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons peanut butter
  • 12 tablespoons honey or maple syrup (optional)
  • 1/4 cup jelly or jam (strawberry or grape)
  • Fresh fruit for topping (optional)

Instructions

  1. In a mixing bowl, combine chia seeds and almond milk. Stir well and let it sit for about 10 minutes until the chia seeds expand and the mixture thickens.
  2. Add the peanut butter and honey or maple syrup if desired, and mix until well combined.
  3. Transfer the mixture into serving bowls or jars.
  4. Swirl in the jelly or jam on top and gently mix it in to create a ripple effect. Refrigerate for at least 2 hours or overnight for best results.
  5. Serve chilled, topped with fresh fruit if desired.

Notes

This chia pudding can be stored in an airtight container in the refrigerator for up to 5 days.
