- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 cup chocolate chips
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 package chocolate cake mix (plus ingredients as directed)
- Whipped cream for serving (optional)
Instructions
- Preheat the oven according to the chocolate cake mix package instructions. Prepare and bake the cake layer in a rectangular pan as directed, ensuring it is totally cooked and set.
- Mix together the creamy peanut butter and powdered sugar in a bowl until smooth and well combined. This will be your filling.
- Melt the chocolate chips with heavy cream in a saucepan over low heat. Stir until smooth; remove from heat and stir in the vanilla extract.
- Spread the peanut butter mixture over the cooled cake, then carefully roll the cake from one end to the other to form a cylindrical log. Drizzle melted chocolate over the top and chill in the refrigerator for at least an hour before slicing.
Notes
Store the roll tightly wrapped in plastic wrap in the refrigerator for up to 3 days. For longer storage, wrap in foil and place in an airtight container for up to a month in the freezer.
