Pani Popo (Samoan Coconut Buns)


Description

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1 cup warm water
  • 1/4 cup coconut milk
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup coconut cream
  • 1/4 cup melted butter

Instructions

  1. Preparation: Combine warm water, yeast, and sugar in a bowl. Let sit for 10 minutes until bubbly.
  2. Mixing: In a large bowl, combine flour and salt. Add bubbly yeast mixture, coconut milk, and melted butter. Stir until smooth dough forms.
  3. Kneading: Turn dough onto a floured surface and knead for 10 minutes until smooth and elastic.
  4. Rising: Place dough in a greased bowl, cover, and allow to rise for 1 hour or until doubled in size.
  5. Shaping: Punch down the risen dough and divide into small balls. Arrange in a greased baking dish.
  6. Coconut Mixture: Mix coconut cream with shredded coconut and pour over the buns.
  7. Baking: Preheat oven to 350°F (175°C) and bake buns for 25-30 minutes until golden brown.
  8. Serving: Serve warm with a cup of tea or coffee.
