- 1 cup fresh or frozen cranberries

- 1/2 cup vegetable oil
- 1/2 cup orange juice
- 2 large eggs

- Zest of one orange
- 1 cup powdered sugar
- 2 tablespoons orange juice (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together eggs, vegetable oil, orange juice, and orange zest.
- Gently fold wet ingredients into dry ingredients, avoiding over-mixing, and fold in cranberries.
- Pour batter into the loaf pan and bake for 60-70 minutes until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack.
- Whisk together powdered sugar and 2 tablespoons of orange juice for the glaze and drizzle over the cooled bread.
