  • 1 cup fresh or frozen cranberries
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup orange juice
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Zest of one orange
  • 1 cup powdered sugar
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, vegetable oil, orange juice, and orange zest.
  4. Gently fold wet ingredients into dry ingredients, avoiding over-mixing, and fold in cranberries.
  5. Pour batter into the loaf pan and bake for 60-70 minutes until a toothpick comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack.
  7. Whisk together powdered sugar and 2 tablespoons of orange juice for the glaze and drizzle over the cooled bread.
