- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger

- 1/2 cup cold unsalted butter, cubed
- 1/2 cup heavy cream
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1/2 cup raisins or currants (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, sugar, baking powder, salt, cinnamon, ginger, and cardamom.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the heavy cream, orange zest, vanilla, and raisins or currants until just combined.
- Turn the dough onto a floured surface, knead gently, roll to 1 inch thick, and cut into triangles or rounds.
- Brush the tops with a beaten egg and bake for 15-20 minutes or until golden brown.
- Cool slightly before serving.
Notes
Serve warm with clotted cream or jam. Leftovers can be stored in an airtight container for up to 3 days or frozen for a month.
