  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground cardamom
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or currants (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, cinnamon, ginger, and cardamom.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream, orange zest, vanilla, and raisins or currants until just combined.
  5. Turn the dough onto a floured surface, knead gently, roll to 1 inch thick, and cut into triangles or rounds.
  6. Brush the tops with a beaten egg and bake for 15-20 minutes or until golden brown.
  7. Cool slightly before serving.
