Instructions
- In a large pot, heat olive oil over medium heat.
- Add sliced sausage to the pot and cook until browned.
- Stir in the diced onion, bell pepper, and minced garlic. Cook until softened.
- Add the penne pasta, chicken broth, heavy cream, and Cajun seasoning to the pot. Mix everything well.
- Bring the mixture to a boil, then reduce heat and let it simmer, stirring occasionally until the pasta is cooked and the sauce has thickened (about 10-12 minutes).
- Season with salt and pepper to taste.
- Serve garnished with chopped green onions and a generous sprinkle of Parmesan cheese.
