One-Pan Lemon Herb Salmon with Greens

Description

A quick and nutritious meal of salmon combined with lemon and mixed greens, perfect for busy weeknights.


Ingredients

Scale
  • 2 salmon fillets
  • 2 cups mixed greens (spinach, arugula, etc.)
  • 1 lemon (sliced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried herbs (thyme, rosemary, or dill)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Push the garlic to the side of the skillet and place the salmon fillets in the skillet, skin side down. Season the salmon generously with salt, pepper, and your choice of dried herbs.
  4. Place the lemon slices on top of the salmon. Surround the salmon with the mixed greens in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Serve warm, garnished with extra lemon slices if desired.
