  • 1 medium zucchini, grated
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup flour

  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish to prevent sticking.
  2. In a large bowl, combine the rolled oats, grated zucchini, eggs, milk, and vanilla extract. Mix well until blended.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
