Ingredients

  • 1 cup mixed nuts (e.g., almonds, walnuts, cashews)
  • 1 cup mixed seeds (e.g., pumpkin seeds, sunflower seeds, chia seeds)
  • 1 cup rolled oats
  • 1/2 cup nut butter (e.g., almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mixed nuts, mixed seeds, and rolled oats.
  3. In another bowl, mix the nut butter, honey (or maple syrup), vanilla extract, and salt until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until everything is well coated.
  5. Scoop tablespoon-sized portions of the mixture onto a baking sheet lined with parchment paper, pressing down slightly to form cookie shapes.
  6. Bake for 10-12 minutes or until lightly golden.
  7. Let cool before serving.
