- 1 cup rolled oats
- 1/2 cup nut butter (e.g., almond or peanut butter)
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mixed nuts, mixed seeds, and rolled oats.
- In another bowl, mix the nut butter, honey (or maple syrup), vanilla extract, and salt until well combined.
- Pour the wet ingredients into the dry ingredients and mix until everything is well coated.
- Scoop tablespoon-sized portions of the mixture onto a baking sheet lined with parchment paper, pressing down slightly to form cookie shapes.
- Bake for 10-12 minutes or until lightly golden.
- Let cool before serving.
