- 1 1/2 cups shredded coconut
- 1 cup graham cracker crumbs
- 1 cup chopped nuts (pecans or walnuts)
- 1/2 cup brown sugar
- 1/2 cup butter
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- In a saucepan over medium heat, combine the butter, brown sugar, and salt. Stir continuously until melted and smooth.
- Remove the saucepan from heat and mix in the vanilla extract. Then add in the shredded coconut and graham cracker crumbs, stirring until everything is well combined.
- Gently fold in the chopped nuts until they are evenly distributed throughout the mixture.
- Drop spoonfuls of the mixture onto wax paper, shaping them into cookies. Allow the cookies to cool and set at room temperature for at least 1 hour before serving.
Notes
Store in an airtight container at room temperature for up to one week. Can also be refrigerated for up to two weeks.
