- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups apples, peeled and sliced
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- Caramel sauce, for topping
Instructions
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan and refrigerate for 30 minutes.
- Beat together cream cheese, powdered sugar, and vanilla extract until smooth.
- Whip the heavy cream until stiff peaks form and gently fold into the cream cheese mixture.
- Spread the mixture over the prepared crust and refrigerate for at least 4 hours.
- In a skillet, combine sliced apples, cinnamon, brown sugar, and lemon juice. Cook until apples are tender, about 5-7 minutes, then let cool.
- Top the set cheesecake with cooked apples and drizzle with caramel sauce before serving.
Notes
Serve chilled; works wonderfully as a dessert after autumn meals. Store leftovers in the refrigerator for up to 3 days.
