  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners to prevent sticking.

  3. Whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet mixture into the bowl of dry ingredients and stir gently until just combined.
  5. Fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.
  6. Divide the batter evenly among the muffin cups, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
