A delightful treat that combines the rich flavors of pumpkin and warm spices with gooey chocolate chips.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine pumpkin puree, vegetable oil, sugars, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips.
  5. Pour the batter into the greased loaf pan and bake for 60-70 minutes until a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle cinnamon sugar on top before baking. Store in an airtight container for up to 3 days or freeze for up to 3 months.
