- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, combine pumpkin puree, vegetable oil, sugars, eggs, and vanilla extract until smooth.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips.
- Pour the batter into the greased loaf pan and bake for 60-70 minutes until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, sprinkle cinnamon sugar on top before baking. Store in an airtight container for up to 3 days or freeze for up to 3 months.
