- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda

- 1 cup vegetable oil
- 4 large eggs
- 2 cups canned pumpkin puree
- 1 teaspoon vanilla extract
- ½ cup unsalted butter
- 1 cup brown sugar
- ¼ cup heavy cream
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and grease/flour a cake pan.
- In a bowl, mix the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the oil, eggs, pumpkin puree, and vanilla extract.
- Mix the wet ingredients into the dry until just combined.
- Pour the batter into the prepared pan and bake for 30-35 minutes.
- For the frosting, melt the butter, stir in brown sugar and cream until boiling.
- Remove from heat and stir in chopped pecans.
- Cool the frosting slightly before spreading over the cooled cake.
