Description

A delightful way to sneak some veggies into your diet while indulging in a sweet treat. This moist zucchini bread combines fresh zucchini and rich chocolate, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup grated zucchini (squeezed dry)
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  4. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

For a richer flavor, serve warm with butter. Store wrapped at room temperature for up to 3 days, or refrigerate for a week. Freezing individual slices is also an option.
