Ingredients

- Beef tenderloin
- Salt and pepper
- Olive oil
- Dijon mustard
- Mushrooms (Cremini or shiitake)
- Puff pastry
- Egg wash (egg and water)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the beef tenderloin with salt and pepper, sear in a hot pan with olive oil until browned.
- Brush the seared beef with Dijon mustard and prepare the mushroom duxelles by sautéing finely chopped mushrooms until moisture evaporates.
- Roll out puff pastry, cut into squares, and place mushroom duxelles and seared beef on top. Fold and seal the pastry.
- Brush the tops with egg wash and bake for 15-20 minutes until puffed and golden brown.
- Cool for a few minutes before serving warm.
Notes
Can be made ahead and stored in the fridge. Freeze unbaked for later use.
