Ingredients

  • 400 g spaghetti
  • 6 tablespoons extra virgin olive oil
  • 6 cloves garlic, thinly sliced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup fresh parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Grated Parmesan cheese, for serving
  • Zest of 1 lemon (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta cooking water, then drain the spaghetti and set aside.
  2. In a large skillet, heat the extra virgin olive oil over medium heat. Add the sliced garlic and sauté gently until golden brown and fragrant, about 2-3 minutes.
  3. Add the red pepper flakes and cook for an additional 30 seconds.
  4. Add the drained spaghetti to the skillet and toss to combine with the garlic and chili oil. If the pasta seems dry, gradually add reserved pasta cooking water as needed. Stir in the chopped parsley, season with salt and black pepper, and serve immediately topped with Parmesan cheese and lemon zest if desired.

Notes

For best flavor, use quality olive oil and don’t overcook the garlic. Adjust chili flakes according to spice preference.
