Meyer Lemon Coconut Macaroons

Ingredients

  • 2 1/2 cups shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1 tablespoon Meyer lemon zest
  • 1 tablespoon Meyer lemon juice

Instructions

  1. Preheat your oven to 325°F (165°C) and prepare a baking sheet lined with parchment paper.
  2. In a bowl, combine shredded coconut, granulated sugar, and salt.
  3. Beat egg whites in another bowl until soft peaks form, then fold into the coconut mixture.
  4. Add vanilla extract, Meyer lemon zest, and Meyer lemon juice to the mixture, then mix gently.
  5. Form small mounds on the baking sheet and bake for 20-25 minutes until golden brown.
  6. Allow to cool completely before serving.
