- 2 1/2 cups shredded coconut
- 1/2 cup granulated sugar

- 2 egg whites
- 1 teaspoon vanilla extract
- 1 tablespoon Meyer lemon zest
- 1 tablespoon Meyer lemon juice
Instructions
- Preheat your oven to 325°F (165°C) and prepare a baking sheet lined with parchment paper.
- In a bowl, combine shredded coconut, granulated sugar, and salt.
- Beat egg whites in another bowl until soft peaks form, then fold into the coconut mixture.
- Add vanilla extract, Meyer lemon zest, and Meyer lemon juice to the mixture, then mix gently.
- Form small mounds on the baking sheet and bake for 20-25 minutes until golden brown.
- Allow to cool completely before serving.
