A delightful fusion of fresh ground turkey, quinoa, and vibrant vegetables drizzled with a creamy tahini dressing.


Ingredients

  • 1 lb ground turkey
  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a saucepan, combine quinoa and water or chicken broth; bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  2. In a skillet, cook the ground turkey over medium heat until fully cooked, about 5-7 minutes; season with salt and pepper.
  3. In a small bowl, whisk together tahini, lemon juice, olive oil, and a pinch of salt.
  4. In serving bowls, layer quinoa, ground turkey, cherry tomatoes, cucumber, red onion, and parsley.
  5. Drizzle the lemon-herb tahini over the bowls before serving. Enjoy!

Notes

Garnish with extra parsley or feta cheese if desired. Store leftovers in separate containers for up to 3 days.
