Description

A delightful condiment that melds sweet mangoes with spices and vinegar, perfect for enhancing various dishes.


Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 cup sugar
  • 1/2 cup vinegar
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt to taste

Instructions

  1. In a large saucepan, combine the diced mangoes, sugar, and vinegar over medium heat.
  2. Stir the mixture continuously until the sugar dissolves and the mixture comes to a boil.
  3. Reduce the heat and add the chopped onion, garlic, ginger, mustard seeds, cumin, chili powder, and salt. Simmer the chutney for about 30 minutes, stirring occasionally, until it thickens and reaches a chunky, sauce-like consistency.
  4. Remove from heat and allow the chutney to cool completely before transferring it to jars.

Notes

Use ripe mangoes for optimal sweetness. Adjust spices and sugar to taste. Store in airtight jars in the refrigerator for up to two weeks or freeze for up to three months.
