Ingredients

- 1 cup unsweetened cocoa powder
- 1 cup natural peanut butter
- 1 cup unsweetened shredded coconut
- 1 cup chopped nuts (such as almonds or pecans)
- 1 cup sugar substitute (erythritol or stevia)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions
- In a slow cooker, combine cocoa powder, peanut butter, shredded coconut, chopped nuts, sugar substitute, vanilla extract, and salt. Stir well to ensure all the ingredients are blended into a thick, rich mixture.
- Cover and cook on low for about 2 hours, stirring every 30 minutes until melted and well combined.
- Once melted, pour the mixture into a lined baking dish and spread evenly. Tap on the counter to remove air bubbles.
- Refrigerate until set, usually about 1-2 hours.
- Once set, cut into squares and enjoy your low carb candy!
Notes
These treats can be stored in an airtight container in the refrigerator for up to two weeks. For longer storage, freeze them layered with parchment paper for a couple of months.
