Ingredients

- 2 cups shredded chicken
- 1 cup mozzarella cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 4 oz cream cheese, softened
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Pepper to taste
- 4 low-carb tortillas
- Olive oil for cooking
- Optional: 1 cup fresh spinach, chopped
Instructions
- Preheat a skillet or grill pan over medium heat and add olive oil. Warm the low-carb tortillas in the microwave covered with a damp paper towel.
- In a mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, softened cream cheese, minced garlic, parsley, salt, and pepper. Mix thoroughly.
- Divide the chicken mixture among the tortillas, placing about 1/2 cup in the center of each. Roll each tortilla tightly, tucking in the sides.
- Place the wraps seam-side down in the skillet. Cook for 2-3 minutes per side until golden brown and cheese is melted.
- Remove from the skillet, slice in half, and serve hot garnished with extra parsley if desired.
Notes
For a vegetarian option, swap the chicken for sautéed mushrooms and zucchini. Experiment with different cheeses for variations.
