Ingredients

  • 2 cups shredded chicken
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste
  • 4 low-carb tortillas
  • Olive oil for cooking
  • Optional: 1 cup fresh spinach, chopped

Instructions

  1. Preheat a skillet or grill pan over medium heat and add olive oil. Warm the low-carb tortillas in the microwave covered with a damp paper towel.
  2. In a mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, softened cream cheese, minced garlic, parsley, salt, and pepper. Mix thoroughly.
  3. Divide the chicken mixture among the tortillas, placing about 1/2 cup in the center of each. Roll each tortilla tightly, tucking in the sides.
  4. Place the wraps seam-side down in the skillet. Cook for 2-3 minutes per side until golden brown and cheese is melted.
  5. Remove from the skillet, slice in half, and serve hot garnished with extra parsley if desired.

Notes

For a vegetarian option, swap the chicken for sautéed mushrooms and zucchini. Experiment with different cheeses for variations.
