Description

A delightful twist on the classic dessert, combining a buttery graham cracker crust with a tangy lemon filling and a light, fluffy meringue topping.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup granulated sugar, divided
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar (for filling)
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 4 large egg yolks
  • 1/2 cup freshly squeezed lemon juice
  • 2 tablespoons unsalted butter
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press firmly into the bottom of the dish to form the crust and bake for 10 minutes.
  3. In a saucepan, mix 1 cup sugar, cornstarch, and salt, gradually stir in 1 1/2 cups water, and cook over medium heat until thick and bubbling.
  4. Beat egg yolks, temper with hot mixture, return to saucepan, and add lemon juice and 2 tablespoons of butter. Cook for 2 more minutes.
  5. Pour lemon filling over crust and spread evenly.
  6. Beat egg whites with cream of tartar until soft peaks form. Gradually add remaining 1/4 cup sugar and beat until stiff peaks form.
  7. Spread meringue over lemon filling, sealing edges. Bake for another 10 minutes until golden.
  8. Allow to cool completely before cutting into squares.

Notes

Serve chilled with powdered sugar or whipped cream for an elegant touch.
