Description

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ⅓ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • ½ cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each.
  4. Stir in lemon juice, lemon zest, and vanilla extract. Gradually add flour mixture, alternating with buttermilk.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
