- 1 cup graham cracker crumbs

- 1 cup powdered sugar

- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a lined mini muffin tin.
- In another bowl, beat the cream cheese until smooth. Gradually mix in powdered sugar until combined.
- Add sour cream, lemon juice, lemon zest, and vanilla extract. Mix until smooth and creamy.
- Pour the mixture over the crusts in the muffin tin.
- Bake for 15-20 minutes until set.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
