- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup sour cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 325°F (160°C).
- Mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture into the bottom of a greased mini muffin tin, making sure to pack it tightly for a solid base.
- Beat the cream cheese and 1/2 cup sugar until smooth and creamy.
- Add the sour cream, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture, stirring well until combined.
- Add the eggs one at a time, mixing until just incorporated after each addition.
- Pour the cream cheese mixture over the crusts in the muffin tin, filling each cavity nearly to the top.
- Bake for 15-20 minutes until set, the centers should be slightly jiggly but not liquid.
- Let cool, then refrigerate for at least 2 hours before serving.
Notes
Serve chilled, optionally garnished with powdered sugar, whipped cream, or a slice of lemon. Store leftovers in the refrigerator for up to 5 days.
