Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a greased mini muffin tin, making sure to pack it tightly for a solid base.
  4. Beat the cream cheese and 1/2 cup sugar until smooth and creamy.
  5. Add the sour cream, lemon juice, lemon zest, and vanilla extract to the cream cheese mixture, stirring well until combined.
  6. Add the eggs one at a time, mixing until just incorporated after each addition.
  7. Pour the cream cheese mixture over the crusts in the muffin tin, filling each cavity nearly to the top.
  8. Bake for 15-20 minutes until set, the centers should be slightly jiggly but not liquid.
  9. Let cool, then refrigerate for at least 2 hours before serving.

Notes

Serve chilled, optionally garnished with powdered sugar, whipped cream, or a slice of lemon. Store leftovers in the refrigerator for up to 5 days.
