Soft, fluffy rolls swirled with lemon curd and bursting with fresh blueberries, perfect for brunch or as a sweet afternoon snack.


Ingredients

  • 1 cup milk
  • 1/4 cup sugar
  • 1/2 cup butter
  • 2 1/4 teaspoons active dry yeast
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup fresh blueberries
  • 1 cup lemon curd
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Heat the milk, sugar, and butter over medium heat until warm but not boiling.
  2. Sprinkle the yeast over the warm milk mixture and let it sit for 5 minutes.
  3. Combine the flour and salt in a large mixing bowl, then add the yeast mixture along with the eggs and mix until a soft dough forms.
  4. Turn the dough out onto a floured surface and knead for about 5-10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl and cover it to let it rise until doubled in size, about 1 hour.
  6. Roll out the dough into a rectangle and spread the lemon curd and blueberries over the surface.
  7. Starting from one edge, roll the dough into a log and cut it into 12 equal slices.
  8. Place the rolls in a greased baking pan and cover them to rise for another 30 minutes.
  9. Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes until golden brown.
  10. Mix the powdered sugar and lemon juice to create a glaze and drizzle over the warm rolls before serving.

Notes

Ensure milk is warm, not hot, when adding the yeast. Use fresh blueberries for the best flavor.
