- 1 cup milk
- 1/4 cup sugar
- 1/2 cup butter
- 2 1/4 teaspoons active dry yeast
- 3 1/2 cups all-purpose flour
- 1 teaspoon salt
- 2 large eggs
- 1 cup fresh blueberries
- 1 cup lemon curd
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 2 tablespoons lemon juice
Instructions
- Heat the milk, sugar, and butter over medium heat until warm but not boiling.
- Sprinkle the yeast over the warm milk mixture and let it sit for 5 minutes.
- Combine the flour and salt in a large mixing bowl, then add the yeast mixture along with the eggs and mix until a soft dough forms.
- Turn the dough out onto a floured surface and knead for about 5-10 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl and cover it to let it rise until doubled in size, about 1 hour.
- Roll out the dough into a rectangle and spread the lemon curd and blueberries over the surface.
- Starting from one edge, roll the dough into a log and cut it into 12 equal slices.
- Place the rolls in a greased baking pan and cover them to rise for another 30 minutes.
- Preheat your oven to 350°F (175°C) and bake the rolls for 20-25 minutes until golden brown.
- Mix the powdered sugar and lemon juice to create a glaze and drizzle over the warm rolls before serving.
Notes
Ensure milk is warm, not hot, when adding the yeast. Use fresh blueberries for the best flavor.
