- 1 pound cake, cut into cubes
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 2 cups lemon curd
- 2 cups whipped cream
- Mint leaves for garnish
Instructions
- In a large sheet pan, spread a layer of pound cake cubes at the bottom.
- Spread half of the lemon curd over the pound cake.
- Layer half of the mixed berries on top of the lemon curd.
- Add half of the whipped cream over the berries.
- Repeat the layers: pound cake, lemon curd, mixed berries, and whipped cream.
- Garnish with mint leaves.
- Refrigerate for at least 2 hours before serving.
