Description

A delightful dessert combining fresh mixed berries with creamy lemon curd and whipped cream, perfect for any occasion.


Ingredients

  • 1 pound cake, cut into cubes
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 cups lemon curd
  • 2 cups whipped cream
  • Mint leaves for garnish

Instructions

  1. In a large sheet pan, spread a layer of pound cake cubes at the bottom.
  2. Spread half of the lemon curd over the pound cake.
  3. Layer half of the mixed berries on top of the lemon curd.
  4. Add half of the whipped cream over the berries.
  5. Repeat the layers: pound cake, lemon curd, mixed berries, and whipped cream.
  6. Garnish with mint leaves.
  7. Refrigerate for at least 2 hours before serving.

Notes
