  • 1/3 cup sugar
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh key lime juice
  • 1 tablespoon key lime zest

Instructions

  1. Preheat the oven to 325°F (163°C). In a medium bowl, mix together graham cracker crumbs, 1/3 cup sugar, and melted butter. Press this mixture firmly into the bottom of a 9-inch springform pan to form a solid crust.
  2. In a large mixing bowl, beat the softened cream cheese until it reaches a smooth consistency. Gradually add in 1 cup of sugar and the vanilla extract, mixing until well incorporated. Add the eggs one at a time, ensuring each egg is fully mixed in before adding the next.
  3. Stir in the sour cream, fresh key lime juice, and key lime zest until the mixture is smooth and well combined.
  4. Pour the cream cheese filling over the prepared crust in the springform pan. Bake for about 60 minutes, or until the center is set and the edges begin to puff slightly. After baking, turn off the oven and leave the cheesecake inside for an additional hour.
  5. Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, chill in the refrigerator for at least 4 hours before serving.

For best results, make sure all ingredients are at room temperature and use fresh key lime juice. Avoid overbaking to prevent cracks.
