Description

Delicious low-carb taquitos filled with savory meat and melted cheese, wrapped in a keto-friendly almond flour tortilla.


Ingredients

  • 1 lb ground beef or chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup almond flour
  • 1 egg
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pan, heat the olive oil over medium heat and cook the ground meat until browned for 5-7 minutes.
  3. Stir in the onion powder, garlic powder, salt, and pepper into the ground meat, then mix in the shredded cheese.
  4. In a bowl, combine the almond flour and egg to form a dough.
  5. Roll out small portions of the dough into thin circles about 5 inches in diameter.
  6. Place a spoonful of the meat mixture into the center of each tortilla, roll tightly and place seam side down on a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes, until golden brown and crispy.
  8. Serve hot with optional toppings like sour cream, guacamole, or salsa.

Notes

Make sure your dough is not too wet; adjust almond flour as needed. Feel free to spice up the filling with jalapeños or spices.
