- 1 lb ground beef or chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup almond flour
- 1 egg
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional toppings: sour cream, guacamole, salsa
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan, heat the olive oil over medium heat and cook the ground meat until browned for 5-7 minutes.
- Stir in the onion powder, garlic powder, salt, and pepper into the ground meat, then mix in the shredded cheese.
- In a bowl, combine the almond flour and egg to form a dough.
- Roll out small portions of the dough into thin circles about 5 inches in diameter.
- Place a spoonful of the meat mixture into the center of each tortilla, roll tightly and place seam side down on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, until golden brown and crispy.
- Serve hot with optional toppings like sour cream, guacamole, or salsa.
Notes
Make sure your dough is not too wet; adjust almond flour as needed. Feel free to spice up the filling with jalapeños or spices.
