Ingredients

- 1/2 cup Coconut Oil (softened, 1 stick)
- 1/2 cup Powdered Monk Fruit Sweetener
- 3 teaspoons Pure Peppermint Extract
- 1/3 cup Unsweetened Cacao Powder
- 1/3 cup Coconut Oil (for coating)
- 1 tablespoon Monk Fruit Sweetener (for coating)
Instructions
- In a small mixing bowl, combine the softened coconut oil, powdered monk fruit sweetener, and peppermint extract. Whisk until smooth and creamy.
- Drop spoonfuls of the peppermint mixture onto a sheet of wax paper and flatten into patty shapes.
- Transfer patties to the freezer for 15 minutes to firm up.
- In a small bowl, warm 1/3 cup coconut oil and 1 tablespoon monk fruit sweetener together until melted, then whisk in cacao powder until smooth. Dip each frozen patty in the chocolate coating and place back on the wax paper.
- Let the patties set at room temperature or refrigerate for faster setting. Store in an airtight container.
Notes
For extra thickness, dip each patty 1-2 more times in chocolate. Store in a cool place or freeze for longer storage.
