  • 1/4 cup erythritol or other low-carb sweetener
  • 1/2 cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup pecans, roughly chopped
  • 1/2 cup sugar-free syrup
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, erythritol, melted butter, egg, and vanilla extract. Stir until a slightly sticky dough forms.
  3. Press the dough into a pie pan evenly to create the crust. In another bowl, mix the chopped pecans, sugar-free syrup, and salt until well combined. Pour the mixture into the prepared pie crust.
  4. Bake for 25-30 minutes, or until set and golden brown. Allow to cool before serving.
