- 1 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup granulated erythritol
- 1/4 cup melted butter
- 1/4 tsp salt
- 3 large eggs
- 1/2 cup sugar-free maple syrup
- 1 tsp vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, mix almond flour, coconut flour, erythritol, melted butter, and salt until crumbly.
- Press the crust mixture evenly into the bottom of the baking dish and bake for 10 minutes.
- In another bowl, whisk together eggs, maple syrup, and vanilla extract, then fold in chopped pecans.
- Pour the filling over the baked crust and return to the oven for an additional 20-25 minutes until set.
- Allow the bars to cool completely before cutting into squares and store in the fridge.
Notes
Serve with whipped cream or sugar-free ice cream for an indulgent treat. Store in an airtight container for up to one week.
