Description

A creamy, rich soup made with sautéed mushrooms, garlic, and onion, perfect for a keto diet.


Ingredients

  • 1 lb mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  3. Stir in sliced mushrooms, cooking until softened and browned, around 5-7 minutes.
  4. Pour in the broth and bring to a simmer, cooking gently for about 15 minutes.
  5. Reduce heat and stir in the heavy cream, cooking until heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
