- 1 lb mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat until it shimmers.
- Add the chopped onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
- Stir in sliced mushrooms, cooking until softened and browned, around 5-7 minutes.
- Pour in the broth and bring to a simmer, cooking gently for about 15 minutes.
- Reduce heat and stir in the heavy cream, cooking until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
