Description

A comforting and satisfying Keto Meatball Casserole that combines hearty meatballs with rich cheeses and marinara sauce, making it a perfect low-carb meal for the whole family.


Ingredients

  • 1 lb ground beef
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup almond flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce (low-carb if desired)
  • 1 cup additional mozzarella cheese for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, mozzarella cheese, parmesan cheese, almond flour, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until everything is well combined.
  3. Form the meat mixture into meatballs (about the size of a golf ball) and place them in a greased casserole dish.
  4. Pour the marinara sauce over the meatballs.
  5. Sprinkle with additional mozzarella cheese over the top.
  6. Bake for 25-30 minutes or until the meatballs are cooked and the cheese is golden.
  7. Let cool for a few minutes before serving.

Notes

Serve with zoodles or a fresh green salad. Leftovers can be stored in the fridge for 3-4 days or frozen in individual portions.
