Description

A delicious, hearty dish that combines tender corned beef with crunchy cabbage in a flavorful broth, perfect for a low-carb lifestyle.


Ingredients

  • 2 lbs corned beef brisket
  • 1 small head of cabbage, cut into wedges
  • 4 cups beef broth
  • 2 tablespoons mustard
  • 1 teaspoon peppercorns
  • 2 bay leaves
  • 1 onion, quartered
  • Salt, to taste
  • Oil for searing (optional)

Instructions

  1. In a large pot, place the corned beef brisket and cover it with beef broth.
  2. Add the mustard, peppercorns, bay leaves, and quartered onion into the pot.
  3. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 150 to 180 minutes, or until the meat is sufficiently tender.
  4. About 30 minutes before serving, add the cabbage wedges to the pot. Cook until the cabbage is tender. Remove the meat and cabbage from the pot, allowing them to rest for a few minutes. Finally, slice the brisket against the grain and serve with the cabbage.

Notes

For added flavor, consider searing the corned beef before simmering. Adjust seasoning to taste and feel free to add other vegetables like carrots or turnips.
