Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup almond flour
  • 1/2 cup erythritol
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease ramekins with butter.
  2. In a large mixing bowl, combine cocoa powder, almond flour, erythritol, salt, and baking powder. Stir until uniform.
  3. In another bowl, whisk together melted butter, eggs, and vanilla extract. Gradually combine the wet ingredients with the dry mixture and fold in the chocolate chips.
  4. Pour the batter into prepared ramekins and bake for 12-15 minutes, until edges are firm but center remains soft.
  5. Remove from the oven, allow to cool for one minute, then invert each ramekin onto a plate. Serve warm.

Notes

Serve with a dusting of powdered erythritol or a dollop of whipped cream. Can be stored in the refrigerator for up to 3 days.
