Description
A delicious low-carb version of classic Chicken Parmesan, featuring tender chicken with a crispy almond flour coating, topped with marinara and gooey mozzarella.

- 2 boneless, skinless chicken breasts
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce (low-carb)
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Pound the chicken breasts to an even thickness, about 1 inch thick.
- In a bowl, mix almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Coat the chicken in the almond flour mixture and pan-fry in olive oil for 4-5 minutes on each side until golden.
- Place chicken in a baking dish, top with marinara sauce and mozzarella cheese.
- Bake for 15-20 minutes until cooked through and cheese is bubbly.
Notes
Pair with zucchini noodles or an arugula salad for a complete meal. Leftovers can be stored in the fridge for up to three days.
