A comforting and hearty Keto Cabbage and Beef Soup that combines savory ground beef with tender cabbage and aromatic tomatoes for a delicious low-carb meal.


Ingredients

  • 1 lb ground beef
  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until soft and fragrant, about 3-4 minutes.
  2. Increase the heat slightly, then add the ground beef to the pot. Cook until browned, breaking it up with a spatula, about 5-7 minutes.
  3. Stir in the chopped cabbage, diced tomatoes, and beef broth.
  4. Sprinkle in the Italian seasoning, and add salt and pepper to taste. Bring to a boil, then reduce heat and simmer uncovered for about 30 minutes until the cabbage is tender.
  5. Serve hot and enjoy!

Notes

This soup stores well in the fridge for up to 4 days and can be frozen for up to 3 months. Consider adding more leafy greens for a lower carb count.
