- 1 lb ground beef
- 1 small head of cabbage, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until soft and fragrant, about 3-4 minutes.
- Increase the heat slightly, then add the ground beef to the pot. Cook until browned, breaking it up with a spatula, about 5-7 minutes.
- Stir in the chopped cabbage, diced tomatoes, and beef broth.
- Sprinkle in the Italian seasoning, and add salt and pepper to taste. Bring to a boil, then reduce heat and simmer uncovered for about 30 minutes until the cabbage is tender.
- Serve hot and enjoy!
Notes
This soup stores well in the fridge for up to 4 days and can be frozen for up to 3 months. Consider adding more leafy greens for a lower carb count.
