Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 4 tablespoons butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can (15 oz) tomato puree
  • 1 cup heavy cream
  • 1 tablespoon garam masala
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Melt 4 tablespoons of butter over medium heat in a large pan. Add the chopped onion and sauté until translucent.
  2. Stir in minced garlic and ginger, cooking for another minute until fragrant.
  3. Add chicken thighs, cooking until browned on all sides (about 5-7 minutes). Pour in tomato puree and season with garam masala, paprika, salt, and pepper.
  4. Simmer the mixture for 15 minutes to meld flavors. Reduce heat and stir in heavy cream, simmering for an additional 5-10 minutes until the sauce thickens. Serve hot with fresh cilantro.

Serve over cauliflower rice or alongside steamed broccoli for a low-carb option.
