Description

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 2 cups cauliflower florets
  • 1 cup green beans, trimmed and cut
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until fragrant, about 2-3 minutes.
  2. Add the beef cubes to the pot and brown on all sides until beautifully browned.
  3. Pour the beef broth into the pot along with thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and let it simmer for 1.5 to 2 hours.
  4. Once the beef is tender, add the cauliflower florets and green beans to the pot. Cook for an additional 20-30 minutes until all vegetables are tender. Adjust seasoning as needed and serve hot.
