- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 2 cups cauliflower florets
- 1 cup green beans, trimmed and cut
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until fragrant, about 2-3 minutes.
- Add the beef cubes to the pot and brown on all sides until beautifully browned.
- Pour the beef broth into the pot along with thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and let it simmer for 1.5 to 2 hours.
- Once the beef is tender, add the cauliflower florets and green beans to the pot. Cook for an additional 20-30 minutes until all vegetables are tender. Adjust seasoning as needed and serve hot.
