Ingredients

- 3 cups chopped apples
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
- In a large bowl, mix together the sugar, oil, and eggs until well blended. Stir in the vanilla extract.
- In another bowl, sift together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the chopped apples and nuts (if using).
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
Serve at room temperature with powdered sugar or a scoop of vanilla ice cream for an extra treat. Can be stored at room temperature for three days or refrigerated for about a week.
